Cuatro Leches Recipe

Here’s a recipe for Quatro Leches Cake, a variation of the traditional Tres Leches Cake with an extra “leche” for added richness. This fourth milk can be dulce de leche, adding a caramel-like flavor to the cake.

Ingredients:
For the Cake:

1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
5 large eggs, separated
1 cup granulated sugar, divided
1/3 cup whole milk
1 teaspoon vanilla extract
For the Milk Mixture:

1 cup evaporated milk
1 cup sweetened condensed milk
1 cup heavy cream
1/2 cup dulce de leche
For the Whipped Cream Topping:

2 cups heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
Optional Garnishes:

Fresh berries
Mint leaves
Caramel drizzle
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.

Prepare the Cake Batter:

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the egg yolks with 3/4 cup of the granulated sugar on high speed until the yolks are pale yellow. Stir in the milk and vanilla.
Gently fold the flour mixture into the yolk mixture until just combined.
In a separate bowl, beat the egg whites on high speed until soft peaks form. Gradually add the remaining 1/4 cup of granulated sugar and continue beating until the whites form stiff peaks.
Gently fold the egg whites into the batter until just combined.
Bake the Cake:
Pour the batter into the prepared baking dish. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool completely in the pan.

Prepare the Milk Mixture:
In a large measuring cup or bowl, whisk together the evaporated milk, sweetened condensed milk, heavy cream, and dulce de leche until well combined.

Soak the Cake:
Once the cake has cooled, poke holes all over the top using a fork or a skewer. Slowly pour the milk mixture over the cake, making sure it gets absorbed evenly. Cover and refrigerate for at least 3 hours, or overnight for best results.

Prepare the Whipped Cream:
In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract on high speed until stiff peaks form.

Serve:
Spread the whipped cream over the top of the soaked cake. Garnish with fresh berries, mint leaves, or a drizzle of caramel if desired. Slice and serve chilled.
